Surfing Clam or Hokkigai (Spisula Sachalimensis)
This surfing clam is harvested from the Russian side of the Japanese sea, after blanching in hot water, the tip of the meat turns into pink unlike the Canadian counterpart which is red. Some of the clams may also have a light brown color, that has nothing to do with freshness, but to do with the characteristics of the catching ground where the clams live.
